Chicken or eggplant parmesan

Slow-simmered marinara sauce

Quick & easy salad dressing

Ingredients & Supplies

Supplies

  • Rimmed baking sheet, wire rack as a bonus

  • Large pot, for boiling noodles

  • Large saucepan or pot with lid, for making marinara sauce

Ingredients

BREADED CHICKEN / EGGPLANT

  • ~2 lbs chicken breast or 1 eggplant

  • 1 cup bread crumbs (panko, for a crunchier preference)

  • 1/2 cup grated Parmesan cheese

  • Egg

  • 1 tbsp milk

  • Mozzarella cheese

  • Garlic powder, oregano, salt, pepper

MARINARA SAUCE

  • 1 can (28 oz.) crushed tomatoes

  • 1 can (15 oz.) canned tomato sauce

  • 1 onion, diced

  • 6 cloves garlic, minced

  • Fresh basil

  • Brown sugar

  • Spices: Italian seasoning, crushed red pepper, oregano, thyme, salt, pepper

Cook-along Steps

  • 🍆 Peel and slice eggplants, about 1/2” thickness

    🍗 Butterfly 2 chicken breasts — use a mallet to flatten and tenderize.

    🧅🧄 Dice a large onion & mince cloves of garlic.

  • Combine the following:

    • 1 cup of bread crumbs

    • 1 tbsp garlic powder

    • 1 tbsp oregano

    • 1 tsp salt

    • 1 tsp pepper

    • 1 tsp thyme

  • Set up three plate-bowls

    First, for the chicken / eggplant slices

    Second, for an egg wash: 1 egg, 1 tbsp milk

    Third, for the bread crumb mix

  • Set a large pot, full of water, on the stove to start boiling.

    Season liberally with salt.

    1. Heat oil and saute onions and garlic

    2. Add canned tomatoes.

    3. Add 1 tbsp Italian seasoning, 1 tbsp oregano, basil, and brown sugar

  • Preheat the oven to 400 degrees F

    Bread the chicken / eggplant

    Dip each slice into the egg wash (both sides),

    …then into the breadcrumbs,

    …then onto the baking sheet.

  • Bake breaded chicken / eggplant

    Bake at 400 degrees F for 20 minutes.

    Make the salad dressing

    Mix together:

    - Juice of half of a lemon

    - 1/2 cup olive oil

    - 1/4 cup grated parmesan cheese

    - salt & pepper

  • Sprinkle mozzarella cheese.

    Pull the baking sheet from the oven and sprinkle mozzarella cheese on each piece.

    Add noodles to boiling water.

    (Turn off the burner and stop simmering the marinara sauce, if you haven’t already.)

  • Broil on LOW for 4-10 min

    Keep an eye on the broiler. Pull out when the mozzarella cheese is browned to your preference.

    Prep the salad

    Toss salad greens with dressing.
