Seriously the Easiest Chicken and Rice Casserole Ever
One of my recent goals has been to save more money….which, as a pro shopper, is very difficult to do. I'm one of those people that over-spends on groceries. And on clothes. And on gadgets. And on pretty much everything I want to overspend on. Unfortunately, my bank account doesn't like me much LSo, now, I've been making an effort to cook more and take lunch to work! Unfortunately, after seriously long days at work, I lack a bit of motivation…The solution? A super easy dinner like tonight's! I don't think I've ever made a meal so easy….especially considering how amazingly high the taste-to-effort ratio was on this. Also, considering I didn't happen to have Cream of Chicken Fat in my pantry, this accidentally became a healthy meal.And you're lucky I'm a nice person, because I'm about to let you in on this tasty, easy, healthy secret. J
Ingredients
- 2 chicken breasts
- 1-1/3 cups of chicken broth
- ¾ cups of rice
- ½ cup of frozen mixed vegetables
- Salt and pepper, to taste
- Some sort of chicken seasoning (I used some Garlic Herb Chicken mix)
Procedure
- Preheat the oven to 375 degrees F, and take out a bowl thing or an 8x8 pan or something.
- Measure out the chicken broth and rice into the bowl.
- Add the seasonings. A little bit of salt, whatever chicken seasoning you decide to use, grind some pepper on it, sprinkle a little garlic salt, and I didn't do this, but add a little bit of oregano too.
- Mix it.
- Lay the chicken breasts on top. I sprinkled some chicken seasoning on top.
- Stick it in the oven and let it cook for 50 min.
- Sprinkle cheese on the top when it's done.
