Chicken and Dumplings
So this last week, I got sick, right? Because what better way is there to welcome in a new season!! Even though I had barely enough energy to roll out of my bed (notice I said roll out of bed, because there was no way I was sitting up and getting out of it….), I somehow managed to muster up the energy to cook myself a comfort meal. It's probably my passion for cooking and mad good skills that worked as a pick-me-up. :D So anyways, it's a good thing I did, because this meal was so good. TOTALLY not fitting my diet, but you know, being sick always works as a good excuse JWithout further ado, here's my recipe for some delicious chicken and dumplings:
Ingredients
- ½ onion, diced

2 carrots, peeled and diced
- Frozen sweet corn

Frozen peas

A whole rotisserie chicken

Fresh herbs
- Chicken broth
- Heavy whipping cream
- 1 can of Pillsbury (or any company, I'm just name-dropping here) biscuits
Procedure

In a pot, melt 4 tbsp of butter and a little bit of olive oil
- Take apart the chicken and split it into smaller pieces

Brown the chicken on both sides. All I added into the chicken was rosemary, sage, and thyme and a littttttttle bit of turmeric.
- Take out the chicken from the pot, and put aside. Now in the same pot, with the oil and butter, add in the onions and carrots and stir around.
- After a minute or two, add in about the same amount of corn and peas.

Add some salt and pepper and a couple bay leaves and some more of the same herbs and stir around.
- While that's cooking, take all of the chicken off the bones and add them into the pot.
- After the veggies and chicken have been thoroughly cooked, add a tbsp. of all-purpose flour, add the chicken broth and the heavy whipping cream. Stir it all together, put the temperature down to medium and let it simmer for about 10 minutes with the lid on.

Meanwhile, unpop a thing of biscuits and cut them each into 4 pieces. I actually thought they turned out kinda large, so maybe 6 pieces would be better. It's up to you.

Add those into the mix and let them float around and cook, and let it simmer for another 20 minutes.
