Pad See Ew
Thai food is a personal favorite, as I’m sure 90% of my friends can attest to. In fact, some of them may go as far to call it an obsession. But obviously, it’s not and I totally have it under control.
Well, one of the things I like about Thai food is that it makes it worth the money to go out and buy it because it’s so challenging to make it at home. However, I recently found out that one of the things I get all the time (pad see ew) is actually….not that hard to make! Theoretically.
So here is my version of pad see ew, that’s supposed to take 15 minutes to make, but actually takes about 35 minutes, according to my handy-dandy timer-friend.
Ingredients
- 8 oz pack of rice flakes (I like these more than the noodles)
- 1 standard pack of chicken breast (around a pound)
- 1 crown of broccoli, chopped into small florets
- 2 cloves of garlic, chopped
- 2 eggs
For the sauce:
- 2 tbsp sweet dark soy sauce
- 2 tbsp oyster sauce
- 2 tsp soy sauce
- 2 tsp sugar
- 2 tbsp water
- 1 tbsp brown sugar
- 1 tsp crushed red pepper
- 1 tbsp chili garlic sauce
Process
Cut the chicken into thin slices. Put in a glass bowl with a couple splashes of soy sauce and let it sit there soaking in all the soy goodness while you prep everything else.
Start prepping the “noodles” according to instructions on the package. It said to soak them in water for 5 minutes. One thing I learned is that you actually want to overcook the noodles. Mine wasn't cooked all the way, so, maybe 10 minutes of soakage.
Meanwhile, go ahead and put a pot of water on the stove to boil, because that always seems to take forever, and it’s the worst to have to wait there.
The broccoli doesn’t get much cook time on the stove, so we have to half-cook that as well. I put the florets in a pyrex dish with a handful of water. I have a small hand and it’s hard to carry water, so it’s probably about 2-3 tbsp of water. I sprinkled some salt on top and stuck it in the microwave for 3:30 minutes.
Then whisk together all the sauce ingredients: the dark soy sauce, the oyster sauce, the soy sauce, the sugar, water, brown sugar, crushed red pepper, and chili garlic sauce.
Now it’s time to heat up your wok. Put a light layer of oil at the bottom. I accidentally put too much so mine was like weirdly watery :(
Add the garlic and let it infuse itself in the oil. Your whole house will smell like garlic and it’ll be amazing.
Once that’s done, throw in the chicken and let it cook for about 4 minutes on each side.
Now shift the chicken to a side of the wok, and crack two eggs in the bottom and start stirring around. (There’s only 1 egg in the picture, so yours should look like more than that.)
The water should probably be boiling by now. So go ahead and drain the noodles from their soaking water and toss them into the boiling water. The package said to let them sit in the boiling water for 3 minutes. I would suggest 5 minutes.
And then the final step is putting everything together! Your chicken and eggs should be sizzling away in the wok, throw in the broccoli and then drain the noodles and put them in with the sauce, and mix it all together!
And then you’ll end up with this. And it’ll be so good. Yummy in your tummy, for sure.

- 1 tbsp brown sugar
- 1 tsp crushed red pepper
- 1 tbsp chili garlic sauce
Process
- Slice chicken into thin strips. Marinate with couple splashes of soy sauce.
- Soak noodles in water for 10 minutes. Put a pot of water on the stove to come to a boil.
- Microwave the broccoli florets with 2-3 tbsp of water and some salt for 3:30.
- Whisk together sauce ingredients.
- Heat up the wok. Lightly coat wok with oil, add chopped garlic.
- Add the chicken and cook about 4 minutes on each side.
- Shift chicken to the side and crack two eggs in the bottom and stir around, letting it cook.
- Add noodles to the boiling water and cook for 5 minutes.
- Put everything together in the wok, so add the broccoli and drained noodles and the sauce. Mix it all together.
- Eat it!
