Cajun Oven-Fried Chicken

What you need

  • 1 lb chicken tenders

  • Hot sauce

  • Buttermilk

  • Garlic

  • Self-rising flour

  • 3 eggs

  • Spices for DIY Cajun seasoning: Smoked paprika, kosher salt, garlic powder, black pepper, white pepper, onion powder, dried oregano, cayenne powder, thyme

DIY Cajun seasoning

To make your own Cajun seasoning

Mix together: 3 tbsp smoke paprika, 2 tbsp Kosher salt, 1 tbsp ground black pepper, 1 tbsp ground white pepper, 1 tbsp onion powder, 1 tbsp dried oregano, 1 tbsp cayenne powder, 1/2 tbsp thyme

Marinate the chicken

Mix together 1 cup of buttermilk, 1/3 cup buffalo sauce, and 1 tbsp of your DIY Cajun seasoning. Pour over your chicken tenders in a bowl and let it marinate in the fridge at least for 1 hour and 24 hours.

Once the chicken has marinated and you are ready to start cooking:

  1. Preheat oven to 350 degrees F.

  2. Create an assembly line for breading. Start with an egg mixture in a shallow dish (I like to use round cake pans or pie plates) by whisking together 3 eggs, 1/4 cup water, 1/4 cup hot sauce, 1 tsp garlic powder. In another similar shallow dish, make a breading mix by mixing 2 cups self-rising flour and 3 tbsp Cajun seasoning.

  3. Bread the chicken tenders. Coat each piece of chicken with the flour mixture. Then, dip in and coat with the egg mixture. Finally, coat it in the flour mixture again. As you bread each chicken tender, place the chicken on the baking sheet.

  4. Bake for 20 minutes once the oven has preheated to 350 degrees F.
