Chicken, Broccoli, and Brown Rice Casserole
What you need
1 crown of broccoli florets π₯¦
Leftover rotisserie chicken (off-bone) π
1 cup brown rice π
2 tbsp butter π§
2 tbsp flour
1 onion, chopped π§
few cloves of garlic, minced π§
2 cups chicken stock
cheddar cheese π§
salt, to taste π§
What to do
Cook the brown rice π , as per directions on the bag / in a rice cooker, however you please. Preheat oven to 350 F.
Microwave the broccoli π₯¦ florets for ~2:30 with a tbsp of water π¦ in a microwave-safe container to slightly steam them
In a pan, melt 2 tbsp of butter π§ , add chopped onions π§ and minced garlic π§ . SautΓ© until the onions are transparent-ish and add 2 tbsp of flour. Add salt π§ and black pepper, to taste, and 1 tsp of italian seasoning.
Mix well, and then slowly add about 2 cups of chicken broth until itβs a gravy-like consistency.
Fold in the rice, chicken, and steamed broccoli florets into the mixture and then transfer to a baking dish. Sprinkle with cheese and bake for 25 min at 350 F.
