Chicken, Broccoli, and Brown Rice Casserole

What you need

  • 1 crown of broccoli florets πŸ₯¦

  • Leftover rotisserie chicken (off-bone) πŸ—

  • 1 cup brown rice 🍚

  • 2 tbsp butter 🧈

  • 2 tbsp flour

  • 1 onion, chopped πŸ§…

  • few cloves of garlic, minced πŸ§„

  • 2 cups chicken stock

  • cheddar cheese πŸ§€

  • salt, to taste πŸ§‚

What to do

  1. Cook the brown rice 🍚 , as per directions on the bag / in a rice cooker, however you please. Preheat oven to 350 F.

  2. Microwave the broccoli πŸ₯¦ florets for ~2:30 with a tbsp of water πŸ’¦ in a microwave-safe container to slightly steam them

  3. In a pan, melt 2 tbsp of butter 🧈 , add chopped onions πŸ§… and minced garlic πŸ§„ . SautΓ© until the onions are transparent-ish and add 2 tbsp of flour. Add salt πŸ§‚ and black pepper, to taste, and 1 tsp of italian seasoning.

  4. Mix well, and then slowly add about 2 cups of chicken broth until it’s a gravy-like consistency.

  5. Fold in the rice, chicken, and steamed broccoli florets into the mixture and then transfer to a baking dish. Sprinkle with cheese and bake for 25 min at 350 F.
