General Tso’s Chicken
What you need
Chicken Lettuce Wraps
Ground chicken
Small onion, chopped
Sriracha, or your favorite chili-garlic sauce
Small head Bibb lettuce
Diced vegetables (carrots, mushroom, bell peppers or water chestnuts)
General Tso’s Chicken
1-2 lbs chicken thigh, boneless-skinless
Corn starch
Chicken stock
Brown sugar
Broccoli
White sesame seeds
Dried red chillies
Soy sauce
Hoisin sauce
Rice vinegar
Garlic
Ginger
Toasted sesame oil
Green onions
What to do
General Tso’s Chicken
Do all the prep work. Chop chicken into bite-size pieces. Smash and chop 3 cloves of garlic. Mince ginger root, about 1 tbsp. Chop the broccoli into florets.
Marinate the chicken. In a bowl, mix together: 1 tbsp sesame oil, 1 tbsp soy sauce. Pour this onto the chicken pieces to marinate.
Make the breading. In a separate bowl, mix 1/4 cup corn starch, 1 tsp ground white pepper, 1 tsp salt.
Fry the chicken. Heat up oil in a wok. Once the oil is shimmering, take some chicken, coat the pieces well in the breading, then fry in the oil.
Make the sauce. Whisk together: 3 tbsp soy sauce, 3 tbsp rice wine vinegar, 2 tsp hoisin sauce, 1/3 cup chicken stock, 3 tbsp brown sugar, 1 tbsp corn starch.
The final fry. Drain all by ~1 tbsp oil from the wok. Add the chopped garlic and minced ginger, and crushed red pepper to taste. Stir and cook for about 2 minutes. Add the sauce and simmer until it thickens. Then, add the fried chicken and broccoli florets, mix and cover for 4 minutes. If the sauce reduces too much, add a tbsp of water or chicken stock.
Garnish and serve. Top with sesame seeds and chopped scallions. Enjoy with hot, sticky rice!
Chicken lettuce wraps
Do the prep work. Dice a small onion, chop 2 cloves of garlic, mince 1 tbsp of ginger, finely dice any vegetables (mushrooms, bell peppers, carrots, water chestnuts, etc.)
Make the filling. In a large pan, heat up some vegetable oil.
Add chopped onions, garlic, and minced ginger to the hot oil. Stir.
Add ground meat and mix. Cook for about 2 minutes.
Add any diced vegetables and 1/3 cup hoisin sauce, 2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1 tbsp sriracha.
Lower to medium heat. Cover and cook for another 5 minutes.
Take off from heat and let cool a little. Add 1 tsp of toasted sesame oil and mix.
Wrap your heart’s content. Scoop some of the filling into a single lettuce leaf. Garnish with some chopped scallions, roll, and eat!
