Poha

What you need

  • 1 cup thick poha (poha is a dried, flattened rice that you can usually find at an Indian store or Asian market)

  • 1 small potato, diced

  • 1 small onion, diced

  • green chili, chopped - to taste

  • Frozen peas

  • spices: turmeric, mustard seed, salt, curry leaves

 

What to do

  1. Rinse the poha and drain water. Let it soak in the colander and set aside.

  2. Prep the potato, onion, and green chili.

  3. Heat a tbsp of oil in a pan. When it’s hot, add the mustard seeds, curry leaves, and 1 tsp of turmeric. Mix together on medium-high heat.

  4. Add diced onion and let the edges brown. Add in diced potatoes and mix well. Reduce to medium-low heat and cover the pan with a lid. Cook for ~5 min.

  5. Add the soaked poha to the pan and mix. Add frozen peas, green chili, and cook covered for another 5 minutes.

  6. Garnish with dhuniya (cilantro) and eat while hot!
