Cajun “fried” chicken

  • Baking sheet & rack

  • Mixing bowls

  • Dutch oven

  • Nonstick skillet

Ingredients

  • 1 lb chicken tenders

  • Hot sauce

  • Buttermilk

  • Garlic

  • Self-rising flour

  • 3 eggs

  • 1 lb green beans

  • 1 onion

  • 3 cups long-grain rice

  • 15-oz can kidney beans

  • 2 tbsp tomato paste

  • Red bell pepper (optional)

  • Bacon (optional)

  • Spices: Smoked paprika, Kosher salt, garlic powder, black pepper, white pepper, onion powder, dried oregano, cayenne pepper, thyme, bay leaves, cumin

Cook-along Steps

  • Make your own Cajun seasoning.

    Mix together:

    • 3 tbsp smoked paprika

    • 2 tbsp Kosher salt

    • 1 tbsp ground black pepper

    • 1 tbsp ground white pepper

    • 1 tbsp onion powder

    • 1 tbsp dried oregano

    • 1 tbsp cayenne powder

    • 1/2 tbsp thyme

    Marinate the chicken

    Mix together 1 cup of buttermilk, 1/3 cup Buffalo sauce, and 1 tbsp of your DIY Cajun seasoning.

    Pour over your chicken in a bowl and let it marinate in the fridge at least for 1 hour, and up to 12 hours.

  • Dice 1 onion, mince 4 cloves of garlic, de-seed and chop peppers and chop bacon (if using)

  • First, saute the bacon, and cook it until the fat has rendered. If you aren’t using bacon, start with heating 1 tbsp oil, and then proceed below.

    Add chopped onions, peppers, and garlic. Set to medium heat and let cook until lightly browned.

  • Cajun Chicken

    Whisk together egg mixture — 3 eggs, 1/4 cup water, 1/4 cup hot sauce, 1 tsp garlic powder.

    Make breading mix — 2 cups self-rising flour, 3 tbsp Cajun seasoning

    Rice

    Back on the stove, once the aromatics are slightly browned, add 2.5 cups of long-grain white rice and reduce heat to low.

  • Mix into rice the following:

    2 tbsp tomato paste, 1 tbsp cumin, 1 tbsp smoked paprika, 2 tsp Kosher salt.

    Preheat the oven to 350 degrees F for the Cajun chicken tenders

  • Add 3 cups of water and drained beans to the rice pot. Let it come to a boil.

    Meanwhile, bread the chicken through the assembly line.

    • First, coat the tender in the flour mixture

    • Then, dip in the egg wash

    • Last, another coat of the flour mixture

  • Cajun chicken

    Bread and place each chicken tender on the oven rack on the baking sheet.

    Bake the tray for 20 minutes at 350 degrees F.

    Green beans

    Wash, trim, and cut green beans into 1-inch pieces. Chop 2 cloves of garlic.

  • Green beans

    In a skillet, heat up 1 tbsp olive oil. Add in chopped garlic and toss. Add the green beans and mix well. Cook covered for a few minutes.

    Add 1/4 cup of water or stock and 1 tbsp of Cajun seasoning

    Dirty rice

    Keep an eye on the rice! After 18 min on medium-low heat, remove from heat and let it rest for 10 min.
