General Tso’s Chicken with broccoli

Chicken lettuce wraps

Jasmine rice


Ingredients & Supplies

Supplies

  • Wok

  • Large frying pan

  • Rice cooker, or oven-safe dish

HONEY-SOY GREEN BEANS

  • Fresh green beans

  • Honey

ACROSS THE MENU

  • Soy sauce

  • Sweet rice cooking wine (or mirin)

  • Garlic

  • Ginger (~1/2 inch of root)

  • Toasted Sesame oil

  • Green onions (3 stalks)

Ingredients

GENERAL TSO’S CHICKEN

  • Chicken thigh

  • Corn starch

  • Chicken stock

  • Brown sugar

  • Broccoli

  • White sesame seeds

  • Dried red chillies

  • Ground white pepper

  • Jasmine rice (and butter or oil, for oven cooking instructions)

LETTUCE WRAPS

  • Small head lettuce

  • Ground chicken / meat

  • 1/2 small onion

  • Hoisin sauce

  • Sriracha (or chili-garlic alternative)

  • Diced vegetables: water chestnuts, mushrooms, peppers, carrot, etc.



Cook-along Steps

  • Use the rice-to-water ratios suggested by the packaging.

    Rice cooker instructions:

    • Mix the rice & water

    • Start the cooker

    Oven instructions:

    • Preheat your oven to 350 degrees F. Bring water to a boil.

    • In an oven-safe dish, mix together: the rice, boiling water, and 1 tbsp butter (per cup of rice)

    • Cover with foil, and bake for 25-30 min.

  • General Tso’s

    • Chop chicken into bite-size pieces

    • Smash & chop 3 cloves of garlic

    • Chop ½ tbsp of ginger

    • Chop broccoli into medium-sized florets

    Lettuce wraps

    • Dice small onion

    • Chop 2 cloves of garlic

    • Mince ½ tbsp ginger

    • Finely dice vegetables (mushrooms, bell peppers, carrots, water chestnuts)

  • General Tso’s chicken

    In a bowl, mix together 1 tbsp sesame oil, 1 tbsp soy sauce. Add diced chicken into the bowl.

    In a separate, small bowl, mix together 1/4 cup corn starch, 1 tsp ground white pepper, and 1 tsp salt. Add this into the chicken and mix well to coat each piece.

  • In a skillet, heat up some vegetable oil. Add chopped onions, garlic, and minced ginger to hot oil. Stir & cook for about 2 min. Add ground meat and mix. Cook for 5 min or until meat is well browned.

  • General Tso’s chicken

    Heat up oil in a wok for the chicken.

    Once the oil is hot, slowly fry the chicken in small batches. For a crispier fry, try not to overcrowd the pan.

    Lettuce wraps

    Meanwhile, mix the following into a blended sauce:

    • 1/3 cup hoisin sauce

    • 2 tbsp soy sauce

    • 1 tbsp rice cooking wine / mirin

    • 1 tbsp sriracha

    Add the diced vegetables and sauce into the pan with the ground chicken.

    Lower to medium heat and cover.

  • Whisk together:

    • 3 tbsp soy sauce

    • 3 tbsp rice cooking wine / mirin

    • 2 tsp hoisin sauce

    • 1/3 cup chicken stock or water

    • 3 tbsp brown sugar

    • 1 tbsp cornstarch

  • General Tso’s chicken

    Drain all but ~1 tbsp oil from the wok. Add garlic, ginger, and crushed red pepper. Stir and cook.

    Add sauce and simmer until it thickens.

    Add fried chicken and broccoli. Stir well and cover for 2 min.

    Lettuce wraps

    Turn the heat off for the lettuce wrap fillings. Add 1 tbsp of toasted sesame oil and mix.

  • General Tso’s chicken

    Top with chopped scallions (greens) and sesame seeds.

    Scoop filling into a lettuce leaf & garnish with chopped scallions
