Chicken and Rice
Casual dinners can be tasty too, you know.
Ingredients
- 1 cut up chicken breast
- Chili powder
- Garlic powder
- Garlic salt
- Italian seasoning
- Crushed red pepper
- Parmesan cheese
- Olive oil
- 1/4 onion, chopped
- 2 cloves garlic, minced
- 4 mushrooms, sliced
- 1/2 green & yellow peppers, diced
- 2 tbsp butter
- 3 tbsp salsa
- 1 cup rice
- 2 cups chicken broth
- 1 chipotle pepper (in adobo sauce)
- Cumin
Process
- Cut up 1 chicken breast and put chili powder, garlic powder, garlic salt, Italian seasoning, crushed red pepper, and Parmesan cheese (optional) and set aside.
- Add olive oil, chopped onions, minced garlic, sliced mushrooms, and chopped green and yellow peppers into a saute pan
- Add the chicken into the pan along with 2 tbsp of butter and 3 tbsp of salsa
- Mix it around a bit....
- Meanwhile, I washed 1 cup of rice
- Stir around a bit, then add 2 cups of chicken broth
- Add the rice into the mix and let it come to a boil
- Finely chop 1 chipotle pepper and add it into the pan
- Sprinkle about 3 tbsp of cumin over top everything and stir around
- Let it sit for about 15 min, stirring occasionally
- anddddd ta-daaa! You have a delicious meal waiting for you to eat :)
