Chicken and Rice

Casual dinners can be tasty too, you know.

Ingredients

  • 1 cut up chicken breast
  • Chili powder
  • Garlic powder
  • Garlic salt
  • Italian seasoning
  • Crushed red pepper
  • Parmesan cheese
  • Olive oil
  • 1/4 onion, chopped
  • 2 cloves garlic, minced
  • 4 mushrooms, sliced
  • 1/2 green & yellow peppers, diced
  • 2 tbsp butter
  • 3 tbsp salsa
  • 1 cup rice
  • 2 cups chicken broth
  • 1 chipotle pepper (in adobo sauce)
  • Cumin

Process

  1. Cut up 1 chicken breast and put chili powder, garlic powder, garlic salt, Italian seasoning, crushed red pepper, and Parmesan cheese (optional) and set aside.
  2. Add olive oil, chopped onions, minced garlic, sliced mushrooms, and chopped green and yellow peppers into a saute pan
  3. Add the chicken into the pan along with 2 tbsp of butter and 3 tbsp of salsa
  4. Mix it around a bit....
  5. Meanwhile, I washed 1 cup of rice
  6. Stir around a bit, then add 2 cups of chicken broth
  7. Add the rice into the mix and let it come to a boil
  8. Finely chop 1 chipotle pepper and add it into the pan
  9. Sprinkle about 3 tbsp of cumin over top everything and stir around
  10. Let it sit for about 15 min, stirring occasionally
  11. anddddd ta-daaa! You have a delicious meal waiting for you to eat :)
