Chicken Fettuccine in a Basil Pesto Cream Sauce
Dinner for one can still be fun! No, seriously. I make fun meals for myself all the time...although, I tend to cook for more than one, so I just end up with lunch for the next day too! So, one of my friends was growing basil and gave me a branch and was like, here. make pesto or something. And, that totally got my mind thinking. I'd been meaning to make pesto for a while, but had never really gotten around to it. Looks like this was just meant to be!So here's how it's made.
Ingredients
- 1 chicken breast, sliced
- olive oil
- 1 tbsp chili powder
- 1 tbsp garlic powder
- 2 tsp oregano
- 1 tbsp basil
- 1 clove garlic, minced
- 1 spoon crushed red pepper, to taste
- 2.5 spoons of sour cream
- 1/2 cup of Parmesan cheese
- 1 box of fettuccine noodles (or probably 1/2 if you're making a smaller portions)
- Any veggies, chopped (mushrooms, red peppers, spinach, etc.)
- 3 to 4 spoons of pesto...this can either be homemade (I have the recipe below this one) or you can get store-bought pesto (totally not as cool)
Process
- Take the slices of chicken and mix together with: a drizzle of olive oil, 1 tbsp chili powder, 1 tbsp garlic powder, 2 tsp oregano, 1 tbsp basil, 1 clove minced garlic, 1 spoon crushed red pepper, and 1/2 a spoon of sour cream. Mix it together really well.
- Heat up a skillet with a drizzle of olive oil.
- On the side, get a pot of water boiling for the pasta.
- Add diced onions and minced garlic to the skillet and stir around.
- While that's cooking up, chop/slice up some veggies you want to throw in there. You can put red peppers, mushrooms, maybe some spinach. Then before the onions and garlic burn, add the veggies. (Chop them up before hand if you're not super speedy with a knife. That's what I did.)
- By now, your water should be boiling, so go ahead and add your pasta into it. Cook as per the directions on the box (usually 10-12 minutes), but MINUS 1 TO 2 MINUTES......(so, cook for 8-10 min instead).
- Mix around the veggies then add the spiced chicken into the skillet. Now put it on medium-low and stir it occasionally for 3 to 4 minutes.
- Once the chicken is relatively cooked, add in 1 cup of heavy whipping cream and 2 spoons of sour cream. And stir quickly!
- Add in like 3 to 4 spoons of pesto and 1/2 a cup of Parmesan cheese and mix it in.
- Now, add the fettuccine noodles in, put it on low, and cover it up. Let it sit and boil for an additional 2 to 3 minutes, then take the lid off and stir it up and serve with garlic bread or something!
Basil Pesto
Ingredients
- a small branch of basil (or like 7-10 leaves)
- 3 cloves of garlic
- 1 tbsp Parmesan cheese
- a sprinkle of salt
Process
- Blend it in a food processor.
Seriously, that's it. It's super easy.
