Chaat Pasta Salad

What you need

  • 1 lb pasta, shape of your choice

  • 1 broccoli crown

  • 1/2 bag baby spinach

  • 4 tbsp cilantro chutney — Find one that you like: two of my go-tos are The Chutney Life’s Cilantro Chutney or Milk & Cardamom’s Green Chutney

  • 1 can of corn, drained

  • 1 can of chickpeas / garbanzo beans, drained

  • 1 large boiled potato, chopped

  • Mozzarella balls, pearl-sized, drained

  • 2 tbsp sour cream

  • (optional) 2 tbsp Indian spicy mango pickle

  • Spices: MDH Chunky Chat masala, salt, pepper

What to do

  1. Prep all the ingredients. Sauté any raw vegetables (broccoli and baby spinach). Season veggies with salt & pepper. Set aside when cooked.

  2. Mix the cilantro chutney with 2 tbsp of sour cream.

  3. Cook the pasta, as per box instructions.

  4. Mix all the ingredients together and toss well. Enjoy with MDH Chunky Chat masala sprinkled on top and Haldirams Aloo Bhujia for some added crunch.
